It's really easy
I have a Canon Powershot G9 (point & shoot).
It can shoot stills & video.
Select video mode, then there's an option for time lapse. Can set it to either 1 shot ever second or 2 seconds.
I set it to 2 seconds and let it go.
That's in video mode, so it's 640x480 resolution.

Your pan/tilt/roll head is really nice. Is it remote control, or cabled? I bet that comes in real handy.
